The word rissole or risole comes from Latin and means 'reddish'. It is a salty starter or appetizer, which can be both stuffed with minced meat, shrimp, chicken or fish, like cheese.

Risols are very popular in Brazil, where they are often filled with sweet corn, minced chicken, and cheese. The secret of this recipe is in the dough. The finer, the more delicacy you will need to work it and thus achieve a consistency that is pleasant to the palate of children.

  • ½ kilo of wheat flour
  • 2 tablespoons (soup) butter or margarine
  • ½ liter of whole milk
  • 2 chicken broth tablets
  • 2 eggs
  • ½ kilo of chicken meat
  • 1 can of sweet corn
  • 150 gr. cheese spread
  • Breadcrumbs and salt

Tip: you can accompany the rissoles with a simple green or tomato salad.

1- First, put the milk to boil with the butter, the chicken broth and the salt.

2- When it starts to boil, add the flour little by little, while stirring, until you can notice that the dough is completely detached from the pan.

3- Arrange the mixture on a surface where you can work it with your hands, until it cools down.

4- Open the dough with the help of a rolling pin, until a thickness of 7 mm is achieved. With the help of a cutter, glass or cup, cut circles on the dough and reserve.

5- For the filling, sauté the chicken in pieces in a frying pan with a little oil. When the meat is done, chop it into very small pieces. Add the corn and then the cheese to spread and form a dough.

6- On the center of the circle of the risoles dough, arrange some of the filling and fold the circle in the middle, forming a half moon.

7- Squeeze the edges of the circles well to prevent them from opening when fried.

8- Pass each risole through the egg beaten with milk, then through the breadcrumbs.

9- Fry the risols in plenty of hot oil until a golden color is achieved. Then drain them on absorbent paper.
